Ingredients:
- 1 can 15 oz chickpeas, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1/2 cup marinara sauce
- 4 vegan hot dog buns
- 1 cup arugula
- 1/2 red onion, thinly sliced
- 1/2 cup sliced cherry tomatoes
Instructions:
Preheat oven to 375F 190C and line a baking sheet with parchment paper
In a food processor, pulse chickpeas, breadcrumbs, parsley, garlic, oregano, smoked paprika, salt, and pepper until well combined but still slightly chunky
Shape the mixture into small meatballs and place them on the prepared baking sheet
Drizzle olive oil over the meatballs and bake for 20-25 minutes, or until golden brown and firm
While the meatballs are baking, heat the marinara sauce in a small saucepan over medium heat
Once the meatballs are done, assemble the sandwiches by placing meatballs in the hot dog buns, topping with marinara sauce, arugula, red onion, and cherry tomatoes
Serve immediately and enjoy
