Cookies & Ice Cream Sandwich Layer Cake

Indulge in the ultimate treat with this Cookies & Ice Cream Sandwich Layer Cake. It combines the creamy goodness of vanilla ice cream with the irresistible crunch of chocolate chip and sandwich cookies, all layered together to create a decadent dessert.

Ingredients:

• 1 quart vanilla ice cream
• 12 chocolate chip cookies
• 12 chocolate sandwich cookies
• 1 cup crushed chocolate cookies
• 1/2 cup melted butter
• 1/4 cup chocolate chips

Instructions:

Take the vanilla ice cream out of the freezer and let it soften for a few minutes

In a bowl, mix the crushed chocolate cookies with melted butter until well combined

Line the bottom of a springform pan with parchment paper

Press the cookie mixture into the bottom of the pan to form a crust

Place a layer of chocolate chip cookies on top of the crust

Spread half of the softened vanilla ice cream over the cookie layer

Top with a layer of chocolate sandwich cookies

Spread the remaining vanilla ice cream over the sandwich cookies

Cover the pan with plastic wrap and freeze for at least 4 hours or until firm

Once firm, remove the cake from the pan and place it on a serving plate

Melt chocolate chips in a microwave or using a double boiler

Drizzle melted chocolate over the top of the cake

Slice and serve immediately
