Ingredients:
- 4 flour tortillas
- 1 cup cooked pork, shredded
- 1 cup diced pineapple
- 1 cup shredded cheddar cheese
- 1/2 cup diced red bell pepper
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
In a large skillet, heat 1 tablespoon of olive oil over medium heat
Add diced red bell pepper and red onion to the skillet and saut for 2-3 minutes until they begin to soften
Stir in the shredded pork and diced pineapple
Cook for an additional 2-3 minutes until the mixture is heated through
Season the mixture with salt and pepper to taste, and then remove it from the skillet and set it aside
Place a tortilla in the skillet and sprinkle with 1/4 cup of shredded cheddar cheese
Spoon a quarter of the pork and pineapple mixture onto half of the tortilla
Sprinkle with chopped cilantro and fold the tortilla in half to create a quesadilla
Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted
Repeat this process with the remaining tortillas and filling
Once all quesadillas are cooked, cut them into wedges and serve hot
