Easy Vegan Meatball Sandwich

A tasty, quick, and easy vegan meatball sandwich full of fresh vegetables that is great for a meal on the go.

Ingredients:

  • 1 can 15 oz chickpeas, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1/2 cup marinara sauce
  • 4 vegan hot dog buns
  • 1 cup arugula
  • 1/2 red onion, thinly sliced
  • 1/2 cup sliced cherry tomatoes

Instructions:

Preheat oven to 375F 190C and line a baking sheet with parchment paper

In a food processor, pulse chickpeas, breadcrumbs, parsley, garlic, oregano, smoked paprika, salt, and pepper until well combined but still slightly chunky

Shape the mixture into small meatballs and place them on the prepared baking sheet

Drizzle olive oil over the meatballs and bake for 20-25 minutes, or until golden brown and firm

While the meatballs are baking, heat the marinara sauce in a small saucepan over medium heat

Once the meatballs are done, assemble the sandwiches by placing meatballs in the hot dog buns, topping with marinara sauce, arugula, red onion, and cherry tomatoes

Serve immediately and enjoy

Shredded Chicken Enchilada Casserole

A delicious and comforting casserole featuring tender shredded chicken, flavorful enchilada sauce, and melted cheese, all layered with corn tortillas for a Mexican-inspired twist.

Ingredients:

  • 2 cups cooked shredded chicken
  • 1 can 10 oz red enchilada sauce
  • 1 can 4 oz diced green chilies
  • 1/2 cup chopped onion
  • 1 cup shredded cheese Mexican blend
  • 1/2 cup sour cream
  • 6 corn tortillas, torn into pieces
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional toppings: chopped cilantro, diced avocado, sliced jalapeos

Instructions:

Preheat oven to 375F 190C

In a skillet, heat olive oil over medium heat

Add chopped onions and cook until translucent

In a mixing bowl, combine shredded chicken, cooked onions, diced green chilies, half of the enchilada sauce, sour cream, and half of the shredded cheese

Season with salt and pepper to taste

In a baking dish, spread a thin layer of enchilada sauce on the bottom

Arrange half of the torn tortillas over the sauce

Spread half of the chicken mixture over the tortillas

Repeat the layers with remaining tortillas and chicken mixture

Pour the remaining enchilada sauce over the top layer and sprinkle with the remaining shredded cheese

Cover the baking dish with foil and bake for 20-25 minutes until heated through and cheese is melted

Remove foil and bake for an additional 5 minutes until cheese is bubbly and slightly golden

Let it cool for a few minutes before serving

Garnish with optional toppings if desired

Baked Bacon Cheeseburger Sliders

Ingredients:

  • 1 lb ground beef
  • 12 slider buns
  • 6 slices of bacon, cooked and crumbled
  • 6 slices of cheddar cheese
  • 1/4 cup diced onions
  • 1/4 cup diced pickles
  • 1/4 cup ketchup
  • 1/4 cup mayonnaise
  • 1 tbsp mustard
  • Salt and pepper to taste

Instructions:

Preheat oven to 350F 175C

In a skillet, cook ground beef over medium heat until browned

Drain excess fat

In a small bowl, mix together ketchup, mayonnaise, and mustard to make the sauce

Slice slider buns in half and place the bottom halves in a baking dish

Layer cooked ground beef over the bottom halves of the slider buns

Top with crumbled bacon, diced onions, and diced pickles

Place a slice of cheddar cheese over each slider

Tacos
