This easy dinner is made on a sheet pan and includes colorful vegetables, juicy salmon, and a tasty teriyaki sauce. Its a great meal for busy weeknights because its easy to make and doesnt require much cleanup.
Ingredients:
- 4 salmon fillets
- 1 cup teriyaki sauce
- 1 tablespoon sesame oil
- 3 cups mixed vegetables broccoli, bell peppers, snap peas
- 1 tablespoon olive oil
- Salt and pepper to taste
- Sesame seeds for garnish
- Cooked rice, for serving
Instructions:
Preheat oven to 400F 200C
Place salmon fillets on a parchment-lined sheet pan
Brush salmon with teriyaki sauce and drizzle with sesame oil
In a bowl, toss mixed vegetables with olive oil, salt, and pepper
Arrange vegetables around the salmon on the sheet pan
Roast in the preheated oven for 15-20 minutes, or until salmon is cooked through and vegetables are tender
Garnish with sesame seeds and serve with cooked rice
