Ingredients:
- 1 butternut squash, peeled and diced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 8 ounces pasta of your choice
- 4 ounces goat cheese
- 1/2 cup heavy cream
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh sage leaves
- 1/4 cup grated Parmesan cheese
Instructions:
Preheat the oven to 400F 200C
Toss the diced butternut squash with olive oil, salt, and pepper
Spread it on a baking sheet in a single layer
Roast the butternut squash in the preheated oven for 25-30 minutes, or until tender and caramelized
While the squash is roasting, cook the pasta according to package instructions
Drain and set aside
In a large skillet, heat the heavy cream over medium heat
Add the goat cheese and stir until melted and smooth
Add the minced garlic and chopped sage to the skillet, cooking for another 2-3 minutes until fragrant
Add the roasted butternut squash and cooked pasta to the skillet, tossing until well coated in the creamy sauce
Serve hot, garnished with grated Parmesan cheese
