Ingredients:
- 1 sheet vegan puff pastry
- 1 bunch asparagus, trimmed
- 2 shallots, thinly sliced
- 1 tablespoon olive oil
- 1/4 cup vegan cream cheese
- 2 tablespoons nutritional yeast
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh herbs for garnish optional
Instructions:
Get the oven ready by heating it up to 400F 200C
Spread the puff pastry out on a baking sheet lined with parchment paper
Cut the asparagus and shallots into small pieces
Put them in a bowl and add the olive oil, salt, and pepper
Spread vegan cream cheese on top of the puff pastry, making sure to leave some space around the edges
The asparagus and shallots should be put on top of the cream cheese
Pour lemon juice over the top and sprinkle nutritional yeast on top
Put it in the oven for 20 to 25 minutes, or until the pastry is golden brown and the asparagus is soft
If you want, you can add fresh herbs as a garnish before serving
