Ingredients:
- 1 lbs skirt steak
- Salt and pepper to taste
- 1 tbsp olive oil
- Salsa Verde:
- - 1 cup fresh cilantro, chopped
- - cup fresh parsley, chopped
- - 2 cloves garlic, minced
- - 1 shallot, finely diced
- - 1 jalapeo, seeds removed and minced
- - 1 tsp Dijon mustard
- - 2 tbsp red wine vinegar
- - cup extra-virgin olive oil
- Optional Garnish:
- - Lime wedges
- - Additional chopped cilantro
Instructions:
Warm up the grill over medium-high heat
Spread olive oil on top of the skirt steak and season it with salt and pepper
For medium-rare, or any other level of doneness you like, grill the steak for 34 minutes on each side
After taking the steak off the grill, let it rest for 5 minutes before cutting it
Put cilantro, parsley, garlic, shallot, jalapeo, Dijon mustard, and red wine vinegar in a bowl
This is the Salsa Verde
As you slowly add the olive oil, whisk it in until its well mixed
Add pepper and salt to taste
Cut the skirt steak into thin slices and serve it with a lot of Salsa Verde
If you want, you can add lime wedges and more chopped cilantro as a garnish
Salad Verde goes well with your grilled skirt steak
