These Vegan Spring Rolls That Arent Deep Fried are full of fresh vegetables and herbs, so theyre both healthy and tasty.
Ingredients:
- 8-10 spring roll wrappers
- 2 cups shredded cabbage
- 1 carrot, julienned
- 1 red bell pepper, julienned
- 1/2 cucumber, julienned
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh basil
- 1/4 cup rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon maple syrup
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- 1 clove garlic, minced
- Lime wedges, for serving
Instructions:
Shred the cabbage, carrot, bell pepper, cucumber, cilantro, mint, and basil and put them all in a large bowl
Get a small bowl and mix the soy sauce, ginger, garlic, sesame oil, and maple syrup with a whisk
Add the dressing to the cabbage mix and toss it all together
Lay out a spring roll wrapper on a smooth, clean surface
Put a small amount of the cabbage mix in the middle of the wrapper
Cover the filling with the wrappers sides, and then roll it up tight
Do it again with the rest of the filling and wrappers
You can squeeze lime wedges over the top of the spring rolls when you serve them
