Ingredients:
- 1 boneless pork roast approximately 3 lbs
- 1/2 cup honey
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 teaspoon Dijon mustard
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1 tablespoon olive oil
Instructions:
Preheat your oven to 350F 175C
In a small bowl, mix together honey, soy sauce, minced garlic, Dijon mustard, black pepper, paprika, cayenne pepper, and olive oil to create the marinade
Place the pork roast in a large resealable plastic bag and pour half of the marinade over the meat
Seal the bag and refrigerate for at least 2 hours or overnight for best results
Remove the pork from the refrigerator and let it come to room temperature for about 30 minutes
Place the marinated pork roast in a roasting pan, reserving the marinade for basting
Bake in the preheated oven for 30 minutes, then baste with the reserved marinade
Continue baking, basting every 15 minutes, until the internal temperature reaches 145F 63C, or until the pork is cooked to your liking
Once done, let the pork rest for 10 minutes before slicing
Serve the honey-baked pork roast slices with any remaining sauce from the roasting pan
