Ingredients:
- 1 lb tortellini
- 2 cups mixed root vegetables such as carrots, parsnips, and sweet potatoes, peeled and diced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions:
Preheat oven to 400F 200C
Toss diced root vegetables with olive oil, minced garlic, salt, and pepper on a baking sheet
Roast in the preheated oven for 20-25 minutes or until vegetables are tender and slightly caramelized, stirring halfway through
While the vegetables are roasting, cook the tortellini according to package instructions until al dente
Drain and set aside
In a large mixing bowl, combine the cooked tortellini and roasted root vegetables
Sprinkle with grated Parmesan cheese and chopped parsley
Toss gently to combine
Serve hot, garnished with extra Parmesan and parsley if desired
