Ingredients:
- 1 lb ground chicken
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 4 hamburger buns
- 4 eggs
- 1 avocado, sliced
- Lettuce leaves
- Tomato slices
- Mayonnaise
- Hot sauce optional
Instructions:
In a bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, chopped parsley, salt, and pepper
Mix until well combined
Divide the chicken mixture into 4 equal portions and shape them into burger patties
Preheat a grill or grill pan over medium-high heat
Grill the chicken patties for about 6-8 minutes per side or until cooked through
While the chicken patties are cooking, poach the eggs by bringing a pot of water to a gentle simmer
Add a splash of vinegar
Carefully crack each egg into a small bowl and gently slide it into the simmering water
Poach for about 3-4 minutes for runny yolks or longer for firmer yolks
Toast the hamburger buns on the grill for a minute or until they are lightly browned
Assemble the burgers: Place a lettuce leaf on the bottom half of each bun, followed by a chicken patty, a slice of tomato, and a few avocado slices
Carefully remove the poached eggs from the water using a slotted spoon and place one poached egg on top of each burger
Spread mayonnaise and hot sauce if using on the top half of the buns and place them on top of the poached eggs
