With a hint of Persian flavor, this vegan version of the traditional frittata is delicious. It is a filling and tasty dish that can be enjoyed for any meal of the day because it is full of protein-rich tofu, colorful veggies, and fragrant spices.
Ingredients:
- 1 block tofu, pressed and crumbled
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup spinach, chopped
- 2 tablespoons nutritional yeast
- 1 teaspoon turmeric
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
Set oven temperature to 375F 190C
Heat the olive oil in a skillet over medium heat
Add the minced garlic and onions, and saut until they become tender
Add spinach, cherry tomatoes, and crumbled tofu to the skillet
Simmer for five minutes
Add nutritional yeast, cumin, turmeric, and salt and pepper for seasoning
Mix thoroughly
Spoon mixture into baking dish that has been greased
Bake for 20 to 25 minutes, or until set and lightly browned on top, in a preheated oven
If desired, top with freshly chopped herbs and serve hot
