This crunchy seaweed salad is low in calories and a great mix of tastes and textures. It tastes good and feels good because it has fresh seaweed, crisp vegetables, and a savory-sweet dressing. Aside from tasting great, its also very good for you.
Ingredients:
- 2 cups fresh seaweed wakame or hijiki
- 1/4 cup rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 1/2 cucumber, thinly sliced
- 1/2 carrot, julienned
- 2 green onions, chopped
- 1/4 cup toasted sesame seeds
- Salt and pepper to taste
Instructions:
Soak the seaweed in cold water for 10 minutes or until it becomes soft
Drain and squeeze out excess water
In a bowl, mix rice vinegar, soy sauce, sesame oil, honey, salt, and pepper to make the dressing
Add the seaweed, cucumber, carrot, and green onions to the bowl with the dressing
Toss everything together until well coated with the dressing
Sprinkle toasted sesame seeds on top
Chill in the refrigerator for at least 30 minutes before serving
Serve the crunchy seaweed salad as a refreshing and healthy appetizer
